Advantages of PEF assisted onion drying (PDF in German)
Robin Ostermeier, head of snacks applications at Elea, published an article in the German meat processing magazine Rundschau für Fleischhygiene und Lebensmittelüberwachung. Drying time reductions, massive energy savings, better rehydration and overall better quality of the dried onions are only some of the advantages of Pulsed Electric fields assisted drying using SmoothCut.
